I never even thought about humidity affecting the powder before reconstitution. Does it ruin the structure instantly or over time?

Spot on. People spend hundreds on compounds and then store them in a bathroom cabinet or a humid kitchen.

I just work on a clean bench with a mini dehumidifier running nearby but a glove box would definitely be ideal.

You can definitely bake them to dry them out again as long as they do not have paper casing that burns.

Just a standard digital one from a local hardware store but I cross check it with salt tests every few months.

It happens gradually unless the seal is totally compromised and moisture gets inside the actual cake.
