What about mass spectrometry data attached at the bottom? Do I need a degree in physics to make sense of those graphs too?

Mass spec mostly just confirms the molecular weight matches what you ordered so you know you got the right molecule.

Exactly right. You will almost always see tiny baseline noise or minor peaks. The key is just making sure your main product dominates the total area.
